If you're looking to protect things private when using Instagram Stories, then they're not your friend.
When you open a person's story - they'll get notified that you've watched it even if the two of you aren't close friends or following one another. There are several methods to get through the Story without your interest being recognized. These are applicable regardless of whether you are using Instagram using your Android or iPhone device. The most obvious of which is the tried-and-tested method of flight mode. Here's how to do it: open Instagram, so the app loads the latest Stories onto your phone. After that, swipe down the notification area at the top of the screen to switch on flight mode. You'll be able to view all the Stories in complete anonymity. Be aware that you'll have to shut down the app prior to changing your phone's flight mode. If their account is private and you want to view their Stories, you must be friends with them in order to see their stories. And some people won't just accept invitations from random accounts they don't recognize. Instagram lets you change accounts very easily, so this could be an option. In the end, you can explore one of the numerous websites out there designed to let you read Stories anonymously. These only work when your account is made public. Websites like AnonIGViewer and StoriesDown will both provide you with Instagram Stories completely anonymously, without the need login to the app. You can also browse a variety of older posts without logging in to these sites.
